Ketchup
Cornstarch
Apple jelly
Current jelly |
2 cups
2 tbsp
1 ½ cups

| METHOD |
Combine ketchup and cornstarch in bowl. Stir
in jellies. Pour over cooked meatballs which have been
placed in a baking dish and heat gently at 325˚F for 20-25
minutes until sauce is bubbling |

Raspberry And Rosemary Glaze
Adapted from Phil Joy From the Kitchen of ENJoy Cooking,
this is A very unique
flavor combination that is simply divine.

| INGREDIENTS |
Olive oil
Chopped, fresh rosemary
Raspberry salsa (or jam)
Raspberry vinegar
Raspberry mustard (or Dijon mustard)
White wine
Salt and pepper to taste |

| METHOD |
| Heat a large non-stick pan to medium high. Add the oil and
rosemary and stir for two minutes to release flavors. Add
the salsa (jam), mustard, vinegar and wine to pan. Bring to
a boil and whisk constantly to make smooth. Keep stirring
until glaze is reduced to a syrupy consistency. Place cooked
meatballs in pan and stir to coat with glaze and cook gently
until meatballs are heated through. Spoon onto serving plate
and garnish with fresh raspberries and sprigs of rosemary. |

Spicy With A Kick Sauce

Water
Vinegar

| METHOD |
| Combine all ingredients in a large non-stick pan. Simmer
over medium heat for 15 minutes, stirring frequently. Add
cooked meatballs and cook gently until meatballs are heated
through. |

Saucy Fast And Easy

Onion soup mix
Tomato soup
Water
Grated Cheddar cheese |
1 envelope
1 can
1 can

| METHOD |
| Mix first three ingredients together. Pour over cooked
meatballs which have been placed in a baking dish. Cover
with foil and bake at 350˚F for ½ hour or until sauce is
hot and bubbly. Melt one cup of grated cheddar cheese over
top just before serving. |

Redefine simplicity with this one ingredient sauce...
- Make the gorgonzola meatballs (Carmen's basic
Meatball recipe) and cook thoroughly.
- Place in a chafing dish on a low setting.
- Here comes the complicated part - pour half a bottle
of dry white wine over the meatballs to keep them moist.
- Pour yourself a glass or two with the left over
wine.
- Serve and look like a gourmet genius!
