TIPS TO BETTER BURGERS
Don't over mix when combining your bison ground with other ingredients. Try not to squeeze or compress when shaping into patties or you may end up with dry, tough burgers.
To prevent sticking, make sure your grill is good and hot before putting the burgers on. Since bison is very lean it is a good idea to brush or spray lightly, both sides of the burger with a light coat of olive or vegetable oil.
Never flatten or score your burgers while they are cooking as you will lose precious juices.
Bison cooks faster than other red meats. So be sure not to overcook. Use an instant read thermometer to check for doneness.

Mix in different ingredients and textures for flavor and added moisture:
- Grated cheese - use flavour packed cheeses such as aged cheddar, parmesan or feta to get a lot of flavor from a small amount
