Carmen says - because Carmen Creek bison is so lean, it cooks very quickly - in fact, faster than any other red meat. For best results, prepare steaks and roasts rare to medium rare. Use a meat thermometer for accuracy. Note these internal temperature guides:

Rare: 135˚F (57˚C)
Medium Rare: 145˚F (68˚C)
Do not cook beyond 155˚F (68˚C)
